If they're sharp enough to cut they are worn out, have you ever checked/adjusted valve clearances?
Looking good there SC. I usually spin the valves up in a drill and polish off the crud with emery cloth but if you do avoid the valve seat and check that its all good. When you refit the valve stem seals make sure they are seated properly and double check the spring that sits around the top lip of the seal is still in place. Tiny bit of grease on the collets help keep them in place when you refit them .
